Pre-Columbian Origins of Tequila: Pulque
To begin with, the Aztecs that resided in ancient Mexico began fermenting pulque using the agave plant. The result was a milky alcoholic liquid known as pulque. During the years 1000 B.C. through 200 A.D., pulque was created using the sap of the agave plant. The agave plant was very important to the Aztec people. In fact, they even worshipped two Gods related to pulque. Mayahuel was the goddess of the plant, and her husband Patecatl was worshipped as well. In the year 200 A.D., evidence that pulque first appeared in ancient drawings that were later discovered on stone walls in the area. However, the emergence of tequila did not appear until many years later when Spain invaded Mexico.
The Creation of Mezcal and Tequila
Next, the fermentation process of pulque underwent a significant transformation when Spanish conquistadors arrived in Mexico in the 1400’s and 1500’s. At that time, Spanish invaders preferred to drink brandy. However, brandy was difficult to find in North America so they improvised by creating mezcal using the agave plant. Did you know that tequila is technically a type of mezcal? The difference is that tequila is created by exclusively using the blue agave plant. On the other hand, various types of agave plants can be used to make mezcal. Later, in the 1500’s, the Spanish government opened a trade route between Mexico and Manila. This allowed mezcal and alcohol to be more easily traded.
Transformation to Modern Tequila in the 1600’s
In the 1600’s, the largest Mexican distillery was constructed in Tequila, Jalisco. Later, the Cuervo family began distilling tequila commercially in Mexico in 1758. Then, in 1873, the Sauza family was able to discern that the blue agave plant was the best type of agave to produce fine tequila. Many years later, the first margarita was created by an Irishman named Madden who owned a bar in Tijuana, Mexico. James Graham, an American journalist, and his wife were on a vacation to Mexico in the 1950’s and stopped at a bar in Tijuana. At Madden’s bar, he created the Tequila Daisy for the journalist’s wife using tequila. Many people believe this was the first margarita ever made. Later, the first recipe for the margarita was published in Esquire Magazine in 1953 which further increased the margarita’s popularity across the world.
Tequila is Mexico’s Intellectual Property
Realizing the power of this potent and flavorful liquor, the Mexican government officially declared tequila intellectual property of Mexico in 1974. By doing so, this requires that tequila can only be produced in Mexico. As a result, other countries are prohibited from producing tequila. The laws in Mexico clearly state that tequila can only be made in the state of Jalisco, and select municipalities in the neighboring states of Tamaulipas, Guanajuato, Nayarit, and Michoacan.
